Cereals are good for the body but some are better than others. We have both refined and unrefined cereals on the market . [br]Some common cereals in Ghana include corn, wheat, guinea corn millet, rice and a few local ones l may not know. All cereals are good for the body because it contains carbohydrates, iron,and other essential nutrients. In their crude form these cereals provide the body with all the advantages of carbohydrates which include roughage and vitamins. [br]However when cereals are processed or refined it losses these vital nutrients which are present in its crude form. This is what makes some cereals and carbohydrates not good enough for the body. The common cereals that are refined include corn , rice and wheat. When you use refined cereals you need to add reasonable amount of vegetables to provide roughage or fibre and vitamins. [br]This is why imported rice should not be preferred to the local rice if you are eating it for the nutrients it contains. The scent and the taste of foods can only wet our appetite but both the scent and taste do not represent the level of nutrients available in it. Right now we know how to use our cereals for good health. [br]Unrefined cereals are better for us, even though we find the refined ones neater and attractive . Kenkey and banku are prepared from unrefined corn. [br]Next time you eat any preparation from corn find out if it was made from the processed or from the whole grain. |
